Abstract

ABSTRAK Pedagang kaki lima adalah pedagang informal yang menempati kaki lima (trotoar/pendestrian) yang keberadaanya tidak boleh menganggu publik,baik yang ditinjau dari aspek sosial,fisik,visual,lingkungan,dan pariwisata. Berdasarkan hasil observasi awal pada penjamah makanan pedagang kaki lima (PKL) di pasar gorang-gareng magetan,pedagang kaki lima yang mendagagangkan makanan basah (pentol,siomay,bakso,dan lain sebagainya),belum memenuhi syarat-syarat hygine sanitasi makanan.Hal tersebut diketahui dari cara penjamah makanan pada pedagang kaki lima seperti tidak memakai celemek,tidak adanya tempat untuk menyimpan peralatan Pengelolahan,tidak adanya tempat untuk menimbun sisasisa (limbah) setelah makanan dibuat basah,pedagang kaki lima tidak memakai alat pelindung kepala,tidak menggunakan sarung tangan pada saat mengelolah makananJenis penelitian yang akan digunakan oleh penulis adalah penelitian deskriptif.Penelitian Deskriptif adalah salah satu metode penelitian yang menggambarkan suatu peristiwa atau fenomena yang sedang Metode penelitian yang digunakan untuk penelitian ini yaitu menggunakan pendekatan kualitatif dengan metode observasi dan wawancara Hasil dari analisis personal hygine sanitasi pedagang kaki lima di pasar gorang – gareng magetan diperoleh hasil 70 % berada di kategori baik dan 30 % berada di kategori buruk..Hasil dari analisis peralatan sanitasi dari penjamah makanan di pasar gorang – garng magetan diperoleh hasil 80 % berada di kategori baik dan 20 % berada di Kategori buruk. Hasil dari analisis tempat Pengelolahan makanan penjamah di pasar gorang – gareng magetan berada di kategori baik dengan presentase 30 % dan 70 % berada di kategori buruk. Hasil dari analisis makanan dari penjamah makanan di pasar gorang-gareng magetan diperoleh hasil 80 % berada di kategori baik dan 20 % pada kategori buruk. Hasil analisis nilai keseluruhan item diperoleh hasil 90 % yang berada di kategori baik dan 10 % berada di kategori buruk.
