Abstract

ABSTRAK Es dawet merupakan salah satu minuman jajanan tradisional Jawa Barat yang mulai dikenal oleh masyarakat luas, minuman berbahan dasar tepung kanji, santan dan gula merah ini disajikan dengan es batu sehingga mengenyangkan sekaligus melepas dahaga Coliform merupakan suatu kelompok bakteri yang digunakan sebagai indicator adanya kontaminasi dan kondisi yang tidak baik terhadap air bersih. Coliform dicirakan sebagai bakteri berbentuk batang gram negative, tidak membentuk spora, yang memfermentasikan laktosa dengan hasil asam dan gas. Berdasarkan hasil Studi pendahuluan tedapat 35 Rumah makan yang menjual Es dawet jabung yang ada di Kecamatan Jabung Kabupaten Ponorogo, dan dari 35 rumah makan yang menjual es dawet jabung diambil 2 sampel untuk dilakukan studi pendahuluan dimana setelah dilakukan pemeriksaan hasilnya adalah Sampel 1 untuk ALT : 3 x 102 koloni/g dengan batas syarat 1 x 104 koloni/g maka memenuhi syarat dan untuk MPN Coliform : 3 MPN /g dengan batas syarat <3 MPN /g maka tidak memenuhi syarat Sampel 2 untuk ALT : 4 x 102 koloni/g dengan batas syarat 1 x 104 koloni/g maka memenuhi syarat dan untuk MPN Coliform : 7 MPN /g dengan batas syarat <3 MPN/g maka tidak memenuhi syarat. Jenis Penelitian yang digunakan dalam penelitian ini adalah penelitian deskriptif, dimana penelitian deskriptif adalah suatu metode dalam meneliti status sekelompok manusia, suatu objek, suatu set kondisi, suatu system pemikiran ataupun suatu kelas peristiwa pada masa sekarang. Hasil Pemeriksaan Mikrobiologi Menunjukkan bahwa pada Santan Dawet Jabung yang dijual pada pedagang 1,2,3,4 dan 5 tidak memenuhi syarat menurut acuan Peraturan Badan Pengawas obat dan makanan Republik Indonesia Nomor HK.00.06.1.52.4011 Tahun 2009 Tentang Penetapan Batas Maksimum cemaran Mikroba dan Kimia dalam makanan Kata Kunci : Bakteorologis, MPN Coliform12 UJI KUALITAS BAKTEOROLOGIS DENGAN INDIKATOR MPN COLIFORM PADA MINUMAN ES DAWET JABUNG DI DESA JABUNG KABUPATEN PONOROGO TAHUN 2023 BACTEREOLOGICAL QUALITY TEST WITH MPN COLIFORM INDICATOR IN DAWET JABUNG ICE DRINK IN JABUNG VILLAGE PONOROGO REGENCY YEAR 2023 Andaru Mahanani Kuncoro1,Djoko Windu P. Irawan2,Vincentius Supriyono3, Hurip Jayadi3 Indonesian Ministry of Health Surabaya Ministry of Health Health Polytechnic Magetan Campus Diploma III Sanitation Study Program Department of Environmental Health Email : andarukuncoro8@gmail.com ABSTRACT Dawet ice is one of the traditional West Javanese snack drinks that is becoming known by the wider community, this drink made from starch, coconut milk and brown sugar is served with ice cubes so that it is filling and quenches thirst Coliform is a group of bacteria used as an indicator of contamination and conditions which is not good for clean water. Coliforms are characterized as gram-negative rod- shaped bacteria, do not form spores, which ferment lactose with the production of acid and gas. The presence of Coliform bacteria in beverages indicates the possibility of enteropathogenic or toxigenic microbes that are harmful to health. Based on the results of the preliminary study, there were 35 restaurants selling dawet jabung ice in Jabung District, Ponorogo Regency, and from 35 restaurants selling dawet jabung ice, 2 samples were taken for a preliminary study where after inspection the results were Sample 1 for ALT: 3 x 102 colonies/g with a requirement limit of 1 x 104 colonies/g then it meets the requirements and for MPN Coliform : 3 MPN /g with a requirement limit of <3 MPN /g then does not meet the requirements Sample 2 for ALT : 4 x 102 colonies/g with requirement limit of 1 x 104 colonies/g fulfills the requirements and for MPN Coliform: 7 MPN/g with a requirement limit of <3 MPN/g means it does not meet the requirements. The type of research used in this research is descriptive research, where descriptive research is a method of examining the status of a group of people, an object, a set of conditions, a system of thought or a class of events in the present. Microbiological Examination Results Show that Dawet Jabung Coconut Milk which is sold to traders 1,2,3,4 and 5 does not meet the requirements according to the reference to the Regulation of the Food and Drug Supervisory Agency of the Republic of Indonesia Number HK.00.06.1.52.4011 of 2009 concerning Determination of Maximum Contaminant Limits Microbes and Chemistry in food Keywords : Bacteorological, MPN Coliform
