Abstract

ABSTRAK SBMKL atau Standart Baku Mutu Kesehatan Lingkungan adalah spesifikasi teknis atau nilai yang dibakukan pada media lingkungan yang berhubungan atau berdampak langsung terhadap kesehatan masyarakat. Yang dimaksud persyaratan persyaratan kesehatan ialah kriteria dan ketentuan teknis kesehatan pada media lingkungan. Tujuan peneliian ini yaitu menjabarkan penerapan prinsip-prinsip hygiene sanitasi makanan di Pondok Pesantren Tahfidzul Qur’an Al-Bahroin Dusun Pengkok Kecamatan Padangan Kabupaten Bojonegoro yang meliputi menilai penerapan bahan makanan, menilai penerapan penyimpannan bahan makanan, menilai penerapan pengolahan makanan, menilai penerapan penyimpanan makanan siap saji, menilai penerapan penyimpanan makanan masak, menilai penerapan cara penyajian makanan masak, memeriksa kualitas mikrobiologi (angka kuman). Jenis penelitian ini merupakan penelitian deskriptif. Hasil penelitian pemilihan bahan makanan di PPTQ Al-Bahroin tidak memenuhi syarat, penyimpanan bahan makanan tidak memenuhi syarat, pengolahan makanan tidak memenuhi syarat, penyimpanan makanan tidak memenuhi syarat, pengangkutan makanan tidak memenuhi syarat, penyajian makanan memenuhi syarat.
